Low Carb Pancakes w. Caramel Sauce



PUMPKIN PANCAKE RECIPE:

• 4 large eggs

• 1/2 cup pumpkin puree

• 1 tbsp sugar free alternative (optional)

(such as monk fruit / erythritol or 5-10 stevia drops)

• 1/2 tsp vanilla extract

• 1/2 cup almond flour (fine)

• 2 tbsp coconut flour

• 1 tsp baking powder (preferably aluminum free!)

• 1/2-1 tsp cinnamon

• 1/4 tsp ginger

• pinch of nutmeg & cloves

• pinch of sea salt

~ pan fry in butter flipping when golden brown ~

makes about 9-11 pancakes

CARAMEL SAUCE RECIPE

1/4 cup butter

1/4 cup erythritol or allulose etc (sugar free sugar)

1/2 cup half n half or heavy cream

1/2 tsp sea salt

1 tsp vanilla extract

1/2-1 tsp molasses (optional)

* can also use brown sugar alternative like swerve *

~ melt butter on medium heat until slightly brown & add sugar alternative, cream, salt, vanilla & molasses if you choose to use it into the pot with the butter, whisk it well once, bring to a boil then immediately lower the heat all the way to low heat and simmer for about 15 minutes ~

• pour on & in anything you'd like ! •

* makes roughly 3/4 cup or 16 tbsp *
